This time of year it's so good to have a jar of potato soup in the pantry. This soup is made with dry ingredients that can be stored indefinitely in a glass jar or a plastic container (both need a lid). How about making it as a gift to give to someone you know will enjoy it? I make a double batch and keep it right on the kitchen counter in a large nice looking glass jar, and as you can see, it's almost time for me to make another batch - it goes fast. It's so simple and basic you'll enjoy warming up with this cup of goodness.
Ingredients:
- 1 3/4 cups of instant mashed potato flakes
- 1 1/2 cups dry milk powder
- 2 tablespoons chicken bouillon granules
- 2 teaspoons dried minced onion
- 1 teaspoon dried parsley
- 1/4 teaspoon white pepper *
- 1/4 teaspoon dried thyme
- 1/8 teaspoon ground turmeric
- 1 1/2 teaspoons seasoning salt **
* Adjust the amount of pepper to your liking; my preference is 1/8 teaspoon.
**Although the recipe calls for seasoning salt I never use it and it still tastes great.
Directions:
- Combine potato flakes, dry milk, bouillon granules, onion, parsley, pepper, thyme, turmeric and seasoning salt in a bowl and stir to mix. Pour into a 1 quart container.
- Attach the following instructions: To serve, place 1/2 cup of the soup mix in a bowl or large cup. Stir in 1 cup of boiling hot water until smooth.
- Enjoy - take the chill off!
